Pumpkin seed press cake and wheat from Biohof Leitner in Regau / Carinthia as well as parts of press cake from Kürbishof Metz in Haag / Lower Austria.
We are particularly proud of this sauce. The manufacturing process is similar to that of our soy sauce, except the use of pumpkin seed press cake instead of soy beans. After oil pressing, the press cake is usually used as animal food or spread on the fields. But the press cake has a high protein content making it perfect for this type of fermentation. The result is a nutty soy sauce that is soy-free.
